Incredible Indian Rojak!

Today, our Guru of Gluttony says…

Bright pink sauce! Once you get the “kuah” right, there’s not much else that can go wrong with Indian Rojak: Take a ton of sweet potatoes, peel, boil, cool, then with fruit, chilli, spices, sesame seeds and crushed roasted peanuts for an irresistibly thick, yummy sauce. Slather said saucy pinkness all over deep-fried morsels like coconut dough fritters, prawn fritters, tempeh, cured cuttlefish… Mmmmm!

But these days, it’s getting harder to find this invention by an enterprising Indian-Muslim gentleman for his fried-food-loving Chinese customers. However, here are a couple of stalls that your Makan Kakis think get the “kuah” (and everything else) right. Interestingly enough, both are within a stone’s throw of each other at Ayer Rajah Food Centre and both are named after the owners’ sons:
