Anyone who remembers the Odeon Beef Kway Teow stall opposite the old Odeon cinema in North Bridge Road would be familiar with this family’s delicious legacy – beefy bowls of delicious noodles.
While the stall has continued in different incarnations and locations since its Odeon beginnings, one brother from that famous family branched out quietly years ago and started a stall that he still runs till today with his daughter. Every detail is seen to with much care and precision, from the brewing of the wholesome beef broth, to the cooking of the thick beehoon noodles, to the laying on of the beefy ingredients and condiments.
Two things make this particular beef noodle stall stand out: The thick, unctious sauce mixed with the broth – made from what Seetoh reckons is an intense beef stock and superior soy, thickened with potato starch – and also the wonderful chinchaclok – fermented krill with salt, vinegar and chilli.
Noodles cooked lightly, slathered in said sauce should be ordered with the works – beef balls, beef tripe, beef tendon, medium-rare beef slices, everything! Add crunchy beansprouts, spicy coriander and that dynamite chilli and chinchalok sipping sauce, and you’ve got a slurpingly good noodles that will take you right back to the good old Odeon days!
