I have been in awe of this local food authority, chef, restaurateur since I was a little girl, watching mum slice, dice and pound spices according to recipes from her well-loved cookbooks. In fact, the Nyonya Laksa my mum cooks is based on her recipe and has been adopted by my family! That’s why it’s a really big deal for me to have Violet Oon with us as our next Makan Kaki.

Not only is she an expert when it comes to the Peranakan cuisine of her heritage, but she has had years of food journalism under her belt, along with being a sought-after food consultant and the head chef/ co-owner of Violet Oon’s Kitchen & Catering.

Now, Violet says she really loves indulging in Peking Duck and it was love at first bite from the moment it was first introduced to Singapore, 30-40 years ago and when she first began eating professionally!

So where does Violet go when she wants an outstanding Peking Duck?

Imperial Treasure Super Peking Duck Restaurant! Admittedly a very long name, but it does live up to it. The duck is roasted to perfection according to time-honoured tradition, with the chefs blowing air between the flesh and fat to create that impossibly crispy skin. And during service, it’s a whole performance – the duck is sliced ceremoniously and the skin served with fluffy pancakes, Hoisin sauce and spring onions.

Of course, after the skin is devoured, you’re asked what you’d like to have done with the rest of the duck. Violet usually goes for a delicious stir-fried noodle dish with lots of the duck meat, or a tasty, rich, comforting soup. So essentially, you get two dishes for the price of one duck and it really isn’t too expensive – less than $80!

Service is outstanding too – here, they do things old-school-style and long-time customers are treated like royalty. The staff recognise you and really take care of you – that’s why many love to entertain here.
