Makan Kakis, Chef Shen Tan is back with another surprising and delicious recommendation this week! Chicken Rice is arguably one of the most tasty and popular local dishes and while Chef Shen loves chicken rice too, when she visits Bugis Street Chuen Chuen Restaurant, it’s not usually for their chicken rice! While theirs is very good, the dish that has captured Chef Shen’s heart is the FISH HEAD CURRY!

This spicy claypot gem is actually quite a well-kept secret, but she’s friends with a guy there and when she saw it being served, she asked him what it was and he told her it’s the best thing they have on their menu! Turns out, the boss of Chuen Chuen is an avid angler, totally into deep sea fishing and that’s why the red snapper in the fish head curry is super fresh. Add great veggies like eggplant, herbs like lemon grass and spices like turmeric in the rempah, plus a hit of pineapple, you get an incredibly moreish, lemak cauldron of curry perfection! Better yet, for just $1, you can  add extra petai in your fish head curry! These stink beans are definitely an acquired taste, but they add such a unique depth to the dish! Masses of approval from Chef Shen & Denise!

Of course, when it comes to fish head curry, there are many versions being served, from the Indian-style, which is heavier on spices and lighter on the coconut lemakness, then there’s the Chinese version which is more lemak, more tangy and fruitier. Chuen Chuen’s Fish Head Curry brings a lot of balance together in one steaming claypot and is so delicious that Chef Tan goes every 2 weeks for her fix! That’s how good it is! And better yet, if you’re feeling hungry & decadent, have it with chicken rice instead of plain white rice. That really takes things over the top!
