Masterchef Singapore Guest Judge & Executive Chef of Alma by Juan Amador, Chef Haikal Johari used to work in Bangkok full time – his returns to Singapore occurred once in a while and only for a couple of days, so the one thing he craved was always Nasi Lemak. In particular, the popular Selera Rasa Nasi Lemak at Adam Road would fill his mind on the plane all the way home. Those in the know will recognise this stall for its illustrious patrons, including Prime Minister Lee Hsien Loong, Indonesian President Joko Widodo and even the Sultan of Brunei! Also, you can’t miss Selera Rasa’s uniquely-named sets inspired by the card game of Poker, like the Royal Flush & Full House!

So of all the nasi lemak stalls in Singapore, what sets Selera Rasa apart for Chef Haikal is their beautifully cooked long grain Basmati rice. It’s not heavy, nor mushy or sticky, but still retains a light coconut fragrance. Each grain of rice is distinct and separate and delightfully fluffy.

The ikan billis is of a superior quality, retaining its crispiness and isn’t too salty. As for the sambal, it’s not too sweet nor blow-your-top spicy, yet has a very deep umami flavour from dried squid or shrimp. Cooked low and slow for a few hours to get rid of the raw chilli taste, this sambal is super seafoody, tasty and mellow.

The chicken wings have been marinated old school kampung style, with turmeric and coriander seeds and are deep fried at last minute so they make it on your plate fresh, hot & crunchingly crispy. It’s all about the perfect combination of chicken, ikan billis, sambal & fried egg. Try Chef Haikal’s choice – the Full House – everything goes very well together, for a man with simple tastes! Chef Haikal says this is the next best thing to his childhood memories of little 50-cent packets of Nasi Lemak bought by his Mother. A little portion of traditional, simple flavours wrapped in a banana leaf, which is really hard to find these days.
